February is the Valencia Flavor Kit.

Traditional Spanish paella, from Valencia, tends to be richer, smokier than the “Americanized” paellas most are familiar with. The original dish dates back to the late 1700’s and consisted of saffron and paprika scented rice, with the local seafood catch of the day, chicken and three types of beans.

Paella exists because of rice, which has existed in Valencia with the arrival of the Moors over 1,300 years ago. Arab traders brought saffron to Spain in the 10th century, which became the Moors’ preferred seasoning for rice. When the Moors left Spain in the late 1400’s, the Valencians’ love for rice dishes lived on. Before long, paella made its way across Spanish lines, where English and American food lovers began serving paella with carafes of Spanish red wine or sangria.

Our Valencia Kit includes recipes for traditional paella, with seafood and chicken, plus a vegetarian and vegan version for the non-meat eaters. This paella is for creating a richer, smokier creation that the “Americanized” paellas most are familiar with. The original dish dates back to the late 1700’s and consisted of saffron and paprika scented rice. We’ve also include a Pimenton Bloody Mary, perfect for whipping up a patatas bravas or tomato gazpacho. Lastly, Rioja infused sea salt is the perfect finishing salt for sprinkling into red wine meringues, chocolate tarts, or homemade caramel sauce. Enjoy!
